Chili Choc Dipped Strawberries

When I told you about the giant apples yesterday I forgot to mention the even bigger (well bigger than normal) strawberries they had in stock. They were pretty pricey but they looked stunning, a vibrant red colour with the green stems still intact, I couldn’t resist. So I bought 4… nearly keeled over when it cost me €1.80 ($2.42), but they were worth it. Ever since my friend brought us the chili chocolate, I have been adding chili to all my choccie creations, it just gives it a lovely lift and it worked well with the stawberries too. You can’t believe […]

Spiced Apple & Pear Pie, a little something for the weekend

When I was in the fruit market on Friday I spied some enormous apples looking tasty and in need of a pastry home! But then I got to thinking while I was going round the store that those ripe juicy pears would compliment this just perfectly and so my spiced apple and pear pie was born in the aisle of the local fruitmarket… I know it’s not very original, but I went with it anyways. It’s tempting to just make a crumble when it comes to baking with apples, but I wanted some pie, it just felt right! I couldn’t […]

Mushroom Vindaloo style Curry served with spiced basmati rice

Nothing quite says TGIF than a Friday night curry and a marathon of comedy, which is what we did last night. We ventured round to our local bar (we haven’t been in about 2 years) and just had a cheeky glass of wine before dinner, we managed to pick the only night they have the weekly quiz on, so after listening to 5 questions we paid and left thinking that perhaps we might actually enter next time… we’ll see though, Martin is the brains of this outfit! I thought I’d try my hand at a vindaloo this time and it […]

Caribbean Vegetable Stew served with Rice & Peas

I’ve never actually been the Caribbean, so haven’t had the delight of trying authentic cuisine from that part of the world, but I would like to go some day. Maybe I can put it on my dream world trip list, it looks like a stunning location and those beaches!!! I sense this is getting to be quite a long list I’m creating. I haven’t made conventional rice and peas purely because I used many of the spices (and the coconut milk) in the stew, so wanted something very light to go with it, which is why the rice and peas […]

Chocolate Chip Shortbread Cookies

I’ve been making cookies for a while now and trying to get the real crumbly cookie texture that I like without having to pack it full of sugar so I thought that combining my shortbread recipe with cookie extras I might get a bit closer to the texture I want.  Turned out, this works just perfectly, a lovely crumbly biscuit that’s not excessively sweet. Usually I don’t bake midweek now, but as my pasta dish last night was relatively the same as last week I wanted to have a nice recipe to post for today, so cookies are up! I’m […]

Ale & Mushroom Pie served with Spring Onion Potato Mash and Balsamic Garden Peas

Every now and again, you can’t go far wrong with a good old pie and this Ale (vegan) and mushroom pie is packed full of flavour, it was an instant hit in this house. I had some Jus Rol puff pastry left over from the En Croute we had the other week, so thought this would be a good idea to use it up. Funnily enough, we watched a movie “It’s Complicated” and there was a scene where they were making chocolate croissants and it showed you how to roll a croissant, well I was fascinated and had to keep […]
