Chocolate Cherry Muffins, ready in 30 minutes.

I hunted high and low for some fresh cherries but had to make do with canned instead, but the muffins turned out a treat, so if you can’t get fresh cherries don’t worry about it, try and get cherries that are in their own juice as opposed to in syrup though. I only used half a can of cherries in this recipe and used the other half for a raw recipe I’m making later on today, so keep en eye out for that coming. It’s just over 3 weeks until I go and visit my sis and little nephew, getting […]

Balsamic Red Onion & Vegetable Medley Tarte Tatin with Avocado and Cherry Tomato Bulgur

Martin saw a photo of this tarte tatin the other day on pinterest and made a request for something similar for dinner, so I happily agreed. I’ve based the recipe on the original from the Gourmet Vegan site which has loads of fabulous recipes to tantalize those taste buds and this tarte tatin (I keep saying it in a sing song voice, like ta dah!.. weird I know!) is really delicious. One of my favourite things for dishes is red onion and balsamic vinegar mix, it’s just packed with flavour and can be used as a side, for burgers, for […]

Delicious Upside Down Pineapple Cake

I was going to try and be clever with the title of this post, I was thinking something along the lines of oops up side your head lyrics but realised that there may be quite a few people who wouldn’t have a clue what I was referring to, so thought I’d go with the safe option! It wasn’t until after I’d made the cake that I remembered that I was supposed to add some cherries… oops, but the cake was lovely regardless, especially when served with a cup of raspberry green tea, lush! You could also have this as a […]

Chili Spiced Polenta with Fava & Kidney Bean Goulash and an Avocado Cream

Anyone spot a chili theme this week, I got a big bag of fresh chilies that are just superb and such a vibrant red colour too, so I just had to pack them into my latest dishes. I haven’t done a polenta dish in a while, so thought I’d tart it up a bit with some chilies and also some chopped pumpkin seeds. You could actually have the polenta as a snack itself or keep the leftovers to use with a salad the next day (which is what we’re doing).  I really should use it more in dishes as it’s one of […]

Carrot & Potato Chili Cakes with a Spicy Mushroom & Tomato Ragout

It’s been a long time since I made these carrot and potato cakes, the last time I made them I fried them (eurgh!) but this time I oven baked them and they were delicious. They can go with a lot of different dishes as well, a side to some portobello mushroom steaks with a nice sauce or to accompany a bean stew etc, very versatile. You also don’t need to add the chili if you don’t want things too spicy, but we love food that has a little kick to it, so I always go a bit nutty with the […]

Delicious Millionaire’s Shortbread

I am very excited about this recipe, I have always loved Millionaire’s shortbread and I always remember visiting my nan and grandad’s when I was a child and there would always be a plate of cakes after dinner that included french fancies, vanilla slices and millionaire’s shortbread, so I was keen to make a healthy vegan version of this cake. I did a bit of research into other recipes for the caramel layer, but I really didn’t want to pack it with loads of sugar and vegan creams etc, I wanted something simple and delicious that wouldn’t worry the waistline, […]
