Luxury Chocolate Orange Cupcakes with a Zesty Chocolate Frosting

Wooo hoooo back in the kitchen today and raring to get cooking. The in-laws came back the other day with a big bag of beautiful oranges… and we all know what that means…. Chocolate Orange time! I thought I’d freestyle it a little bit with the frosting, there’s no icing sugar in this one, I just love peanut butter in my cookies and cakes these days and I thought it would serve me well as a frosting and I was proved correct, it worked really well with the almond and orange juice… I had to taste it frequently to make […]

Mushroom Bourguignon Pie with Roast Potatoes, Roast Sweet Potatoes and Balsamic Mushy Peas – a great Sunday Dinner Option

I am missing my kitchen so much, we’ve been in “holiday mode” while the in-laws are here, which means eating out and I’m so torn, on the one had I do like getting dressed up to go out but on the other hand….. what about my poor blog…. no recipes, no creations, niente! So I shall share my successful dinner option that I served the family the other day (they are serious carnivores by the way) I made my mushroom bourguignon, but made it pie style, something similar to what they would eat themselves (minus the meat). The great thing […]

Raw Chocolate Caramel Date Bars, scrum-diddly-uptious!

Apologies there aren’t any new main course recipes at the minute, I am making some of my tried and tested recipes for my inlaws, so tonight I made my white bean cannelloni, which went down a treat, I skipped the chili though as they aren’t keen on spicy foods, but it was just as tasty, I added a splash of balsamic instead to give it a nice sharpness. So whilst I’m revisiting main dishes, I’m still creating my sweet treats and these Chocolate caramel date bars are yum, yum, yummy. You just keep them in the freezer and slice off […]

Quick and Easy Blueberry Tea Cake with Maple Drizzle

We ate out last night with it being the in-laws first proper night here, so I didn’t get the chance to cook anything for dinner, so decided to make something nice and quick for afternoon tea and I’ve got a nice big box of Blueberry Bliss tea bags which I thought I might have a go with. The Quince Green tea cake I made the other week was lovely, so I felt confident in trying it out with some of my other teas (I have a lot of fruit and green teas!) This takes half an hour and it’s a […]

Sweet Potato Falafel with Oven Baked Chunky Thyme Chips & Balsamic Mushy Peas

I don’t know what it is but I always seem to over cater when I make falafel, there’s only 2 of us and I end up making enough to feed 4 or 5 people! Oh well, never mind, it tastes just as good the next day for lunch! You can go with white potatoes for your chips or you can mix it up and use sweet potato, the choice is yours, which ever you prefer really. I’m in a quandary at the moment, I was chatting to one of the ladies from the gym and she mentioned she’d started running […]

Raw Cherry & Almond Chocolate Bars

After the success of the raw mint chocolate oat bars the other week, I thought I’d use up the remaining cherries I had from Friday in a similar recipe. Me, being the marzipan fiend that I am, wanted to include some almond extract to accompany the cherries and it’s just an absolute delight. These bars remind me of the Petit Fours my nan would send me at Christmas time, it’s amazing how decadent these taste, yet are packed with good things! The in-laws are arriving in approx 6 hours, I got up early this morning to clean all my windows […]
