Dinner tonight was truly scrummy and it took me all of 20 minutes to make it and serve it up! Managed to finish in time for The Bang Theory double bill!
I love satay style sauces and the broccoli looked so fresh and delicious in the fruitmarket, I had to get some, then I found a great recipe on willcookforfriends and I was set!
So here it is, super fast, super tasty pasta, great for all the family.
Easy Spaghetti with Broccoli and Peanut Sauce (serves 2)
175g whole wheat spaghetti
2 large heads of broccoli, cut into florets
2 cloves garlic, finely chopped
2 tbsp soy sauce
1 tsp. fresh ginger finely chopped
For the peanut sauce:
1/2 cup natural peanut butter
1/4 cup hot water
1/4 cup apple cider vinegar
2 tbsp soy sauce
1/2 tsp. cayenne pepper
Sesame Seeds to garnish
Method:
1. In a pan bring water to a boil and cook pasta, drain, and set aside
2. In a wok medium-high heat, add 2 TBSP hot water, add broccoli florets and give the pan a shake or a stir. Let cook 1-2 minutes. Add garlic and ginger, then pour in soy sauce and stir until mostly evaporated. Remove broccoli from pan while still bright green and slightly crisp. Set aside.
For the sauce:
1. In a small sauce pan over medium-low heat, add the peanut butter and 1/4 cup of the hot water, stirring to combine.
2. Mix in the rest of the ingredients, you can add a 1/4 cup water to thin the sauce to your desired consistency.
3. Toss noodles and broccoli in the sauce, sprinkle with sesame seeds and serve.
So quick and delicious, I was practically licking my plate when I realised I forgot to take a photo!
