Delicious Chocolate Orange Cookies

I finally got round to baking these luscious little cookies this afternoon, I had great plans of making them yesterday but the day just got away from me, so it was my first kitchen project for today! I think my favourite part of the baking process for the cookies would have to be grating the orange zest, the smell was just incredible. I also forgot to add the baking powder, but as a positive note for reducing ingredients, they didn’t need any!

I had a comment a few weeks back regarding some other cookies I made so I thought I’d mention here as well, these are more “biscuity” (crumbly) than soft and chewy cookies, so keep that in mind when you make them!

Martin said they were the best cookies I’ve made, but he says that every time… think it’s in the job description!

Going to make my haggis nachos tonight, whip up some guacamole and salsa and settle in to watch Les Misérables.

Delicious Chocolate Orange Cookies

Makes 8 cookies – ready in half an hour

 

3 tbsp Peanut Butter

1 1/2 tbsp Maple Syrup

1 tsp Vanilla Essence

1 tbsp Hazelnut Milk

Zest of one large orange

2 tbsp freshly squeezed orange Juice (half a large orange)

3 tbsp Cocoa Powder

3/4 cup of Buckwheat Flour

1 tsp sesame seeds to garnish

 

Method

1. Preheat oven to 180 degrees celcius and line a baking tray with parchment paper.

2. In a mixing bowl, combine peanut butter, maple syrup, milk and vanilla and whisk until smooth

3. Add in the cocoa powder and orange zest and mix through

4. Now add in the buckwheat flour and orange juice and mix until a dough starts to form .

5. Take a tbsp portion of the mixture and roll into a ball, pressing slightly in your palm to flatten it and pop in the parchment paper, you should get around 8 cookies from this mixture. Take a fork and press the cookies down to flatten them some more, then sprinkle with the sesame seeds and go over the cookies once more with the fork to make sure the sesame seeds stick. Pop in the oven for 10 – 12 minutes, then remove from the oven and allow to cool.

 

** These cookies are approx 90 calories each.

  1. I made some tiny changes based on what I had in the kitchen but OH my goodness these were so delicious that I ate a sizeable portion raw! *koff* Yum 😀

    1. I am forever doing that, I only want to taste test but then I get greedy and find I’ve already gone through half the cookie batter, whoops!!! Yx
