Vegan in Edinburgh, it’s simple, it’s delicious!

Being vegan in Edinburgh is awesome! I could just leave it there, as most vegans in Edinburgh will already know what I’m talking about.  But for those who are perhaps new to this incredible city or are planning a holiday here, then I thought I would share some of my top “go to” places should you find yourself looking for some delicious food! This list is in no particular order, nor are these sponsored recommendations, they are purely the places the hubby and I have been to recently and have been overwhelmed with the quality and choice of vegan fare, […]

Avocado Stuffed Lentil Balls with Sweet Potato Wedges & Homemade Hot Sauce

For the last 6 weeks I have had access to an awesome kitchen and do you know how many times I’ve actually “properly cooked” in it? Go on guess! The answer, to my eternal shame, is none! I had such great visions of all the things I was going to make, oh the cakes I would bake, the fine dining ideas I would play around with, but, alas, I have been drawn away from the kitchen and into the comfy seats of the cafes, bars and eateries of Edinburgh, a city that is booming with vegan food! It’s quite awesome. […]

Vegan in Rome, it’s much easier than you think!

It seems like all of a sudden, Rome is a Mecca for vegans. Not only do the supermarkets carry some fantastic vegan friendly ranges, but restaurants are catching on too with vegan specific menus that have a great selection, not just a garden salad like some places we will not mention! It doesn’t seem that long ago, only 3 or 4 years really, that we were resigned to having slices of pizza pomodoro for dinner while we were in Rome. Now there is absolutely nothing wrong with that, the pizza is delicious, but after about 10 slices during a break […]

Gourmet Veggie Burgers with Hot Sauce and Fries

Right away I’m going to tell you that I had other plans for these burgers, they were supposed to be stuffed with (drum roll please…) avocado. Just a nice slice of avocado stuffed into the centre before baking. But, and this is due to my lack of planning, there was not a ripe avocado in sight! So I’ll try it next time, but if you do fancy adding it into this recipe then you go for it! Please also note that these are soft burgers, so be gentle with them. I know there are a lot of people who are […]

Chilli Falafel with Paprika Sweet Potato Wedges and a Cherry Tomato Chutney

We did it, we completed our first Legion Run on Saturday in Larnaca and all my nervous rants are now a distant memory. It was an amazing day and we can’t wait to sign up for another. I took on obstacles that I thought were impossible for me, my excuse of not having strong arms went straight out the window as I hauled my backside over the cargo net wall, pulled myself up a steeply inclined wall. I will admit though that I chickened out of the very first vertical wall obstacle, it was the first one I came to, […]

Simple No Bake Goji Energy Bars, ideal for a post gym snack.

This is a super short and sweet recipe to give you a little something to nibble on if you get an afternoon snack attack. I literally flung in what I had in my cupboard and with the added bonus of the almond butter (which I am loving) that I bought at Holland and Barrett last week, I was no doubt onto a winner! Do not despair if you haven’t got all the same ingredients, you can easily use peanut butter, cashew nut butter or any nut butter really and swap the goji berries for some raisins or cranberries and if […]
