Oh So Simple Strawberry Tart

I’ve had this little recipe waiting to be added for a few weeks now, but I’ve been working on a few house projects (updating my kitchen) and we also took ourselves off for a couple of days to Protaras for my birthday, which was fabulous. I was meeting up with family for the evening and taking in the delights of the Abba tribute band at the Love Boat pub (yes it really was called the Love Boat) and then suffered the next day from the effects of the local wine, ah well! We spent the day on Nissi Beach in […]

Chilli and Garlic Sauteed Veggies with Spinach Basmati Rice topped with a Cumin spiced Tahini Sauce

ZUMBA! Yes, I have returned to Zumba classes at the gym, there is a new instructor who is very good and I’m definitely feeling energized after the class which is fabulous. I still look ridiculous when attempting some of the moves, but hey, I’m getting to that age where I just don’t care anymore, I’m having fun! If you haven’t tried Zumba, I highly recommend it, not only is it good exercise but it’s great for uplifting your mood and making you smile and there’s some fab music in there too, what’s not to love! Now, following on from the […]

Kasha Buddha Bowl topped with Avocado & Mango served with a Soy & Wasabi Dressing

I’ve stocked up on my Kasha (toasted buckwheat groats), unbelievably tasty and unbelievably easy to make, it should be a staple in everyone’s kitchen for a healthy and delicious meal option as it’s a great source of protein and fibre! It’s also ideal if you eat a gluten free diet as it’s not actually a grain or a cereal and is actually a fruit seed. That’s right, no WHEAT, no GLUTEN! I’ve used this Kasha as a substitute for bulgur wheat and quinoa, I’ve used it in burgers and I’m going to have to try it out as a porridge […]

Crumbly Praline Cookies

So, first things first. Sweetness levels of cookies. For all the cakes and cookies I bake, I make them to suit our own tastes and these last 2 years have seen our palettes change dramatically as we’ve moved away from processed foods and maintained our plant based eating habits. What we’ve come to realise is we now don’t like super sweet snacks and desserts and this is coming from a woman who would devour sticky toffee puddings and packs of Thorntons champagne truffles in one sitting. I used to have a ridiculous sweet tooth. But things change, our cravings for […]

Vegetable Thai Red Curry with Spinach, Udon Noodles and Toasted Cashews

What a hectic couple of weeks we have had and such a great time meeting up with friends and family. There have been birthday parties, quiz nights (of which we were the victors!) family gatherings, shopping, beautiful walks, and exploring places including London, Cambridge and Ely. I’m exhausted now and need a rest! Food wise, I think the highlight had to have been finding a falafel van in Cambridge which served the most delicious falafel, the wraps they had were gorgeous with hummus, harissa paste and mango chutney, my mouth is watering! Just when I thought it couldn’t get any […]

Deliciously Decadent Chocolate Date Brownie

I have, what I can only describe, as the mother of all bruises on my right leg. It’s just come up today and I assume it’s from Saturday’s exertions. I’m still a little stiff but thankfully managed to get through my yoga class this morning and I was showing off my battle scars to my gym buddies like a big kid! We’re off to see the family next week and I am very much looking forward to a little socialising and trying out some new restaurants in the London area. I might even treat myself to a little shopping at […]
