Tagliatelle with Balsamic & Chili Marinated Tofu Pan Seared and served with a Roasted Cherry Tomato & Spinach

I’ll admit it, when we first started on our plant based diet I really wasn’t keen on eating Tofu, especially not as a main meal. I think that was probably due to the fact that all we could buy here was the silken tofu and trying to use it as a robust part of a entree is not ideal. Of course when I realised that silken tofu was outrageously fabulous in dessert making, well, a whole new world opened up to me, including my favourite cheesecakes, fruit tofu yoghurts and not forgetting those cheeky chocolate mousses! So, we’ve recently found […]

Deliciously Rich Lentil & Spinach Lasagne with a dairy free Bechamel Sauce

It’s raining outside and I am thinking it’s probably time to get out my autumn/winter sweaters, I also want a nice steaming mug of hot chocolate (made with hazelnut milk, yummy!) crazy how the weather affects not only our moods but our appetites. This is one of the reasons I went for the lasagne last night, it’s such a hearty dish that makes you feel all warm and cosy, well that’s how it makes me feel anyway! This particular recipe will feed 3 no problem, though for us it was 2 main meals and we shared the rest this lunchtime […]

Fusilli Pasta with Tangy Cherry Tomatoes & Wilted Spinach

I’ve been loving spinach recently, I’m throwing it into pretty much all my main dishes, it’s great for you and so easy to incorporate into a recipe, so it was a simple decision for me to add it to my pasta and had the additional bonus of adding a nice contrast in colour which I really like. This pasta dish took all of half an hour, maybe a little less, so it’s quick, easy and taste-tastic. Adding the mustard was a spur of the moment thing, I was looking at the pasta and thinking of ways to jazz it up […]

Veggieball Spaghetti Bolognese served with Avocado Toast

I’m trying to catch up with the recipes I’ve done in the last week and somehow forgot all about the leftover veggieball bolognese that I made, so thought I better get it on quick smart before I completely forget about it and send it to the archives never to be seen again! I used the left over mexican veggie burgers I made last week, but you can use whatever veggie burgers you can get your hands on, alternatively, if you’ve no burgers then I say just buy some big portobello mushrooms, slice them up nice and chunky and add them […]

Penne Pasta with Garlic Sauteed Okra, Cherry Tomatoes, Basil & Black Olives

Pasta day… one of my favourite days, purely because it feels like one of the easier dishes of the week. I already know that there is going to be some form of pasta, so all I need to come up with is the sauce. But to be fair, it is getting a bit more tricky, I always want to do something different each week, so I have to think a lot more carefully about what I’m putting in it. Luckily though, nearly every vegetable goes well with pasta (although I’m not counting brussel sprouts in there!!) I just need to […]

Lentil & Carrot Pasta Bake served with Green Peas

This was going to be a lasagne until I realised I’d forgotten to buy the pasta strips, so I had to improvise and use the spaghetti (bucatini) than I had in so pasta bake is the result. But remember, if you want to, you can just sub the bucatini pasta for lasagne sheets and you’re back on track! Not sure if it’s a childhood thing but Martin can’t have lasagne (or now pasta bake) without a side of peas and usually a slice of garlic bread, luckily they both go well with the dish so no complaints here from me! […]
