Vegan in Rome, it’s much easier than you think!

It seems like all of a sudden, Rome is a Mecca for vegans. Not only do the supermarkets carry some fantastic vegan friendly ranges, but restaurants are catching on too with vegan specific menus that have a great selection, not just a garden salad like some places we will not mention! It doesn’t seem that long ago, only 3 or 4 years really, that we were resigned to having slices of pizza pomodoro for dinner while we were in Rome. Now there is absolutely nothing wrong with that, the pizza is delicious, but after about 10 slices during a break […]

Veggie Enchiladas filled with spicy kidney beans, mixed peppers and Mexican spiced rice, topped with spicy mushroom marinara sauce

Keeping in with the theme of “comfort food” I think that I can easily pop this Enchiladas recipe in that category, it’s a very hearty and filling dish and is packed full of the good stuff including kidney beans, mushrooms and mixed peppers, all great ingredients to keep us ticking over. I was going to make some guacamole to go with it but no avocados for me and in the end we didn’t really need the extra side dish. Something to keep in mind with the enchiladas is that you don’t have to stick with the kidney beans, if you […]

Fusilli Pasta with Tangy Cherry Tomatoes & Wilted Spinach

I’ve been loving spinach recently, I’m throwing it into pretty much all my main dishes, it’s great for you and so easy to incorporate into a recipe, so it was a simple decision for me to add it to my pasta and had the additional bonus of adding a nice contrast in colour which I really like. This pasta dish took all of half an hour, maybe a little less, so it’s quick, easy and taste-tastic. Adding the mustard was a spur of the moment thing, I was looking at the pasta and thinking of ways to jazz it up […]

Kung Pao Broccoli with Brown Rice and a sprinkling of Sesame Seeds

We were pretty hungry yesterday after our visit to the beach. The boys braved the sea, but it’s still way too cold for me, so I just relaxed on the beach, listening to some summer tunes (in actual fact, I just fall asleep, it’s my default setting as soon as I close my eyes… makes yoga fun!) Anthony likes Chinese style food, so I thought I’d make us a big old stir fry with a Kung Pao (or Kung Po) sauce, the dish was really tasty and quite spicy, my only addition to it would be to add a little […]

Portobello Mushroom & Black Eye Pea Cassoulet with Basil Bulgur and Green Beans

I went crazy in the kitchen last night and could easily have catered for about 6 people rather than 3, so the boys had double helpings to get it all finished! I also made my samosa bake yesterday which we had for lunch and I made the dark chocolate cupcakes for dessert and today I’m just about to go whip up a falafel pie and if I get time later this afternoon I might just make a nice batch of millionaire’s shortbread…. can you tell I haven’t been in the kitchen much these last few days??  Severe withdrawal pangs! I […]
