We were told by lots of people that Australia would be expensive and that we would spend most of our budget on food/drink, but we’re a slightly different kind of traveller. Deliciously Minty Chocolate Date Muffins

With it being the festive time of year, peppermint just has to be featured in some baking recipes doesn’t it? Oh the simple joys of a bag of buckwheat flour, oh how I have missed thee. Chocolate Chip Cinnamon Muffins

Here is the recipe for muffins where I have used rice flour, I was very intrigued with what the consistency would turn out like and I have to say I am pleased with them, I liked the denser texture and they were more “muffin” like than my cupcakes which is what I wanted.
