Start your day right with a delicious and healthy breakfast – Overnight Oats

Recipes / Monday, May 7th, 2018

If you happen to be looking at changing your breakfast routine and getting your body fuelled for the day, look no further than the super easy, hassle free Overnight Oats. You can get really creative with what you throw in there, but our basic starting point is oats, milk/water, cinnamon, raisins, flax and chia, then we like to mix it up with our fruits. We’ve had fresh strawberries, kiwi, frozen sour cherries, frozen black chokeberries, you get the drift I think. You could also use blueberries, apple, mango, banana, I have a banana intolerance so I don’t actually know what this would be like, but go for it if you enjoy bananas.

This is a hearty breakfast and sets me up well for the day and I find I’m not getting hungry at all until it’s lunchtime, so no awkward hunger pangs in the middle of the morning sending me on the hunt for some snacks to tide me over.

It’s also packed with great nutrients that kick off your day the right way. The best thing is that you make it up before you go to bed (or even after you’ve made your dinner), leave it in the fridge over night and then grab your spoon and dig in!

Play around with the ingredients, we love cinnamon so we put in a decent amount, but you can put more or less in depending on your own preference. You can also get away with just flax or just chia, in case you don’t have both in. I love the consistency the chia seeds give it, especially with the strawberries!

Hearty Overnight Oats Breakfast
This will serve 2 people

1 and ¼ cup of rolled oats
2 tablespoon of chia seeds (optional)
2 tablespoon of ground flax (optional)
½ tablespoon of ground cinnamon
¾ cup raisins
1 cup of frozen berries or fruit of choice
¾ cup of non dairy milk
1 and ¼ cups water

Directions

In a decent sized container with a lid (I personally use a medium sized cafetiere), a large mason jar would be just as good, pop in all the dried ingredients.

Now this bit is up to your personal choice, you can either pop in the fruit now or you can mix it through in the morning if you don’t want your fruit too mushy. I personally like putting it in the night before, but this is up to you!

Add the liquid and mix thoroughly, pop the lid on and place in the fridge and your done!

You can also adapt the liquid ratio to suit as well, I like my overnight oats a little “runnier” than a thick porridge consistency, but start out with a 2 to 1 ratio and then modify from there – it’s your brekkie, make it perfect for you!

When you get up in the morning, give the whole thing another good stir before serving/eating and you are good to go!

We do not find the need to add any sweetener to this breakfast and would suggest trying it au naturel to see how you feel about it before adding in any maple syrup etc. The sweetness from the fruit and the delicious bite of the cinnamon is just perfect for me!
