Healthy, clean, vegan diet still going with my attempt at the Burrito Bowl

We’ve been scouring the internet looking for some delicious meals that we can incorporate into our clean, vegan diet and there is such a plethora of information out there that it’s getting harder to choose from so many wonderful recipes. One of our dishes last week was from holycowvegan.net where the title was Fat Free Burrito Bowl, we changed it slightly but the result was just as tasty as the original recipe (albeit with some fat in it!) Recipe for Burrito Bowl (serves 2 as  a big meal) Bulgar Wheat Ingredients: 1 cup bulgar wheat 2 cups vegetable stock 1 […]

Travel Bug, a trip to Italy!

We have decided this year that we will take a proper holiday, one were we will actually be tourists for a change, so having looked at the cost of flights we’ve decided on a trip to Italy.  It’s an understatement when I say “I Love Italy”, the place is truly gorgeous and steeped in historical culture and the things you can see and do there would take this lifetime and the next to do justice! Fitness Inspiration, what motivates you to work out?

In my late teens/early twenties going to the gym became a social outlet for me.  Working odd shift patterns meant that when everyone else was at work, I was left to entertain myself and the gym was the best way to focus my energy and avoid becoming a recluse! Lemon Poppy Seed Muffins (Clean & Vegan)

I was amazed at how tasty these turned out, usually my first attempt at baking things, doesn’t always quite go to plan, but I’m taking these as a triumph! Remember you can double up on the recipe and make a big batch of them, they’ll freeze perfectly well, the batch I made turned out 12 muffins and they were a nice size as well. I kept my muffins plain, but you could always whip up a vegan vanilla frosting or just drizzle a little icing over them to make them pretty. Lemon Poppy Seed Muffins 2 cups Wholewheat flour 1 […]

No bake Energy Balls, afternoon snack quandary…

I’ve been making these delicious no bake energy balls for our afternoon snacks (or early morning pre -gym snack), and don’t get me wrong they are truly delicious (recipe to follow) but I’m on the look out for some different healthy treats that I might add to my new clean vegan repertoire. I’ve been searching through a whole list of sites and found so many things that I’d love to try, my main interest being to get some colour into my treats as at the moment they’re all much the same, healthy, but beige-y. It’s a bit of a juggle trying […]
