Dark Chocolate Chip Cakies, great recipe for a quick treat as they are ready to eat in half an hour!

For New Year I have decided to do my “cake/treat” baking on the weekend. I can’t just be baking every day when it’s just Martin and I here to eat them, it’s just nonsensical, so I can make healthy snacks during the week and on Saturdays I’ll make something a little bit naughty, little bit decadent for a treat.

This weekend I found some great vegan choc chips at my supermarket, I couldn’t make my mind up if I wanted cake or cookies so I opted for the middle ground of cakies… not quite cake not quite biscuit, but lush anyways.

It’s a simple start to my baking and next week I might opt for something with a little more pizzazz, I’ll have a good think about it. ooooh thinking about it now, I might do a crumble of some sorts and make some vegan custard (I’m only saying this because it’s cold and wet today, it it’s sunny next week, I probably won’t feel like a warm pudd), we shall see.

Anyways, sad day today as I have to take the Christmas Tree down, Martin didn’t go for my idea of it as a permanent fixture, it’s just so pretty and warming… but it is the 6th, so down it must come, I’ll just have a coffee (with hazelnut milk mmmmm) and a cakie before I set to work.

Chocolate Chip Cakies (that fabulous blend of cookie and cake)

Makes 10 cakies

 

1.5 cups wholewheat flour

½ teaspoon baking powder

½ teaspoon baking soda

1 tbsp ground flax seeds

1 teaspoon cinnamon

Pinch nutmeg

1 teaspoon vanilla

3 tbsp natural brown sugar

1 cup coconut/almond milk

2 tbsp dark chocolate chips

 

Method

 

1. Preheat oven to 180 degrees and line 2 baking trays with parchment

 

2. In a bowl mix up the flax seeds, vanilla, coconut milk and stir together

 

3. In a large bowl combine the flour, baking powder & soda, cinnamon, nutmeg and sugar.

 

4. Add the wet ingredients to the dry and mix to combine, don’t over stir it though, then add in the chocolate chips and fold into the mixture.

 

5. Spoon the mixture onto the baking trays and pop in the oven for 12 – 15 minutes or until they look golden. Remove from oven and allow to cool… if you can wait that long!

 

** If you want to make them super chocolatey, pop 2 tbsp of vegan cocoa powder into the batter mix.
