Baked Onion Bhajis, a tasty and healthy starter for your curry night.

I mentioned before that I was going to make some onion bhajis and I’ve gone and done it. Usually the type I’ve had before have all been deep fried, but not in the this house.  I baked them in the oven and they were super tasty. I was really pleased with the result and was glad to have found some Gram Flour in my supermarket. I think I’ll be making some more Indian cuisine very soon as it’s ideal for my weekend curry night.

Yesterday I ended up watching Skyfall, told you I was in the mood for an action film, I thought it was pretty good, not out of this world amazing, but a decent film. Daniel Craig is growing on me more and more as 007.

Going to be at a loss next week when we’re back visiting the family as I don’t get to cook very often there, but hoping to get the odd recipe in here and there with some of the great British produce, might make some crumbles to keep warm through the freezing temperatures they’re having just now! Yes… crumbles and vegan custard, oh I can taste it now… I wonder if Rhubarb is in season!

Baked Onion Bhaji

Baked Onion Bhajis

Makes 6 Bhaji

 

3 onions finely sliced

2 cloves garlic minced

2 chillis finely chopped

½ tbs olive oil

½ tsp ground coriander

1 tsp turmeric,

½ tsp ground ginger

½ tsp chilli powder

1 tsp garam masala

4tbsp Gram flour and enough water to bind

 

Method

 

Heat a sauté pan over a medium heat and lightly fry the spices before adding to the garlic, chili, onions, spices and olive oil and stir to combine, it should be quite loose, then add in the gram flour and water until everything is quite sticky and moist.

 

Using a dessert spoon, spoon the mixture onto the baking tray and bake in the oven for 30 minutes, remove from oven and pop in a sauté pan with ½ tbs olive oil to crisp up (optional).
