Veggie Irish Stew and Dumplings

Right, I should probably start by saying that the last few recipes have been great big portions and are quite calorific, this is ONLY because we have increased our daily activity for our Legion Run training and we want to make sure that we are eating sufficient to cover our daily needs. So if you are active, work out a lot, have a strenuous job etc then you do (especially if you are plant based like us) need to make sure that you are eating plenty of good foods and keeping up your calorie intake. If however, you are a […]

Chickpea & Coriander Patties served with spicy Spanish Rice, Chilli and Avocado Aioli and Sauteed Sweet Red Onions

I wonder if you can overeat chickpeas! I have been using them in quite a lot of my dishes lately, but they are just so easy to use it seems silly not to fling them in a dish when I can! I had in my head that these were going to be crispbakes, don’t ask me what I thought I meant by crispbakes, I think I’ve heard it someplace and thought it sounded good, but when I looked at my finished plate they were more burger-ish in style, so patties it is. I’ll keep the crispbake idea for something else, […]

It’s an epic adventure, roaming Italy in 2014

When we decided to go back to Italy this year for a holiday, I don’t think even we imagined how amazing it would. We love Italy, be it the bustling streets of Rome to the more sedate wanderings around the porticoes of Bologna. Previously we’ve been to Italy on short breaks but this time, we just went for it, 3 weeks of Italian bliss where we managed to walk 300km over the course of the holiday and see so much of this beautiful country (I’m slightly sad this way, I wore my pedometer everywhere!). I just want to share some […]

Quick & Easy Mushroom & Beansprout Teriyaki with Soba Noodles

I’m always amazed at how quickly you can make a delicious meal. When I sauntered through to the kitchen to make this dish, I’d planned at least 45 minutes to make it and I was happily surprised when it was ready and on the plate in under half an hour, what’s not to like about that. Using simple ingredients that take no time at all to prepare and cook you can be sure to minimise your time in the kitchen. I’d originally thought about just mushroom teriyaki, but, and I mention this in my notes, no matter how many times […]

Super Quick and Healthy Veggie Delight Power Bowl

Back into the swing of things again, restocked the cupboards and cooking some fabulously healthy meals again. I wanted to try something a little different with my buddha style bowl this week and opted to add in some fruit and mint for a little change. I wasn’t sure at first if I had gone a bit mental with the ingredient list and that when it came to eating it the flavours would just clash, but thankfully all turned out well and incredibly tasty with a real freshness to it that I loved. We have, for our sins, signed up for […]
