Moroccan Spiced Hot Pot served with Sweet Potato Chips (thin crisps) and Minted Tahini Cream

This dish will tantalise the tastebuds and keep you feeling lovely and toastie this winter. Packed with beautiful herbs and spices, this simple little dinner recipe is just yummy and fabulously healthy. I love Moroccan inspired dishes, the smell from the kitchen is always beautifully fragrant and I can’t wait for it to be ready so I can devour it. The addition of the sweet potato chips was a last minute call for me, I really fancied having a few different textures on the dish, so these chips/crisps and the roasted squash seeds were just ideal and the ingredients all […]

Tagliatelle with Balsamic & Chili Marinated Tofu Pan Seared and served with a Roasted Cherry Tomato & Spinach

I’ll admit it, when we first started on our plant based diet I really wasn’t keen on eating Tofu, especially not as a main meal. I think that was probably due to the fact that all we could buy here was the silken tofu and trying to use it as a robust part of a entree is not ideal. Of course when I realised that silken tofu was outrageously fabulous in dessert making, well, a whole new world opened up to me, including my favourite cheesecakes, fruit tofu yoghurts and not forgetting those cheeky chocolate mousses! So, we’ve recently found […]

Portobello Mushroom Parcels stuffed with a Herbed Black Olive & Red Onion Tapenade

Yum, yum and yum again, if I could have this dish in front of me again right now I would demolish it in no time at all, the flavours in that tapenade are quite seriously delicious. I loved the whole meal and have contemplated it for Christmas Day, I think if I do it again I might layer on some wilted spinach before laying the stuffed mushroom on top and sealing, that’s probably the only change I would make there. Going to head out this afternoon and see if I can get my mitts on a Christmas Pudding mould as […]

Delightfully Crumbly Chocolate Orange Cookie Drops

I’m just back from my little jaunt away and I flew into that kitchen, I had a couple of ideas brewing in my head that I needed to try out and wanted some “non vegan” taste testers to give me some feedback. Martin’s great at the taste tests, problem is he seems to love everything so either my cooking is in fact up to his high standards or he’s frightened I might strop and not cook for him ever again. I started off with these Chocolate Orange Drops and followed up with some Christmas Mince Muffins (recipe to come tomorrow) […]

Simple and Delicious Coffee Chocolate Truffles

Looking for something to nibble on during the festive season, then you will be delighted with these simple to make no bake truffles. Coffee and chocolate, another of my favourite flavour combinations works so well when creating sweet treats and they go down very well with a cheeky cup of coffee on a crisp afternoon or as an after dinner surprise. Just keep them in the freezer until you want one and they’ll last a long time so don’t be shy in doubling or tripling the recipe and making a big batch. I only make a small batch at a […]

Festive Season Baking, Christmas Mince Pies

Now that we have our visitors over for 10 days we plan on being out and about which means I’m not in the kitchen as much, but if there is one thing I HAVE to make come December time it’s Christmas Mince Pies. As I do every year, I buy the mincemeat ready made, not because I don’t have time to make it myself, I do, it’s just so darned expensive to make a batch myself, so I seek out vegan mincemeat (make sure it’s made with vegetable suet) and make up a nice big batch of Christmas Mince Pies […]
