Winter Vegetable & Kidney Bean Stew topped with Rosemary & Thyme Chickpea Dumplings

Oh it’s been a while since I posted, I’m getting withdrawal symptoms. But, I have still been cooking away in the kitchen and this is the first time I’ve had to sit down and do a little post. We’re getting ready for the in-laws arriving next week so I’ve been out and about getting a few new bits for the house and of course we had our visit to the new mall in town which was fabulous, when I say fabulous I mean absolutely fabulous. There is one particular shop that I know I’m going to become a regular in, […]

Clementine & Blue Poppy Seed Loaf

I love Clementine Oranges and usually at this time of year I tend to just stuff them at the bottom of a Christmas stocking to be eaten later on that day, but this is the first time I’ve baked with them and now, it certainly won’t be the last time. I also just noticed that the poppy seeds I picked up at the supermarket were blue (how fabulous) didn’t make any difference to the taste, so if you don’t see any blue poppy seeds at your local shop just buy normal black seeds instead. You could always use sesame seeds […]

Festive Mushroom, Lentil and Nut Roulade perfect for Thanksgiving and Christmas

It’s getting nearer the holiday season and I’m already thinking of Christmas Dinner and what I’ll be making. It’s also close to Thanksgiving so I thought I would make a dinner table centre piece that would be perfect for both days and you can tweak it however you like to make your perfect holiday dinner. I got completely carried away and made 2 huge roulades last night but the best thing, THE VERY BEST thing, is that your Holiday dinner can be made and on the table in an hour, now that beats spending all of Christmas Eve and most […]

Chocolate, Coconut & Goji Berry Muffins

Oh the simple joys of a bag of buckwheat flour, oh how I have missed thee. I am back to baking my muffins with my favourite flour and I know it’s just a small thing, but I just love the taste of cakes and cookies that I’ve made with buckwheat. I bought 2 bags of it on Monday and I’ll be passing that awesome supermarket next week so will pop in and buy another 2 bags, just in case they decide to disappear from the shelves there too! I have a lot of Christmas/Festive baking I want to do so […]

Wasabi Chickpea & Chia Veggie Burgers with Quinoa Tabbouleh and a Lemon & Coriander Hummus Dip

I’m making great use of all my new cupboard staples that I bought on Monday and for last night’s dinner I opted to use the chia seeds and quinoa and had my first attempt at making a Tabbouleh. I think I first had Tabbouleh at a fashion show dinner party this summer, although I think that was made with bulgur, which I probably would have used prior to getting my hands on a big bag of quinoa, and I loved the taste of it, such a fresh and zesty flavour to it. Just the smells coming from the bowl when […]

Veggie Shepherds Pie served with Crushed Balsamic Peas

I am in food heaven at the moment, we tried out a new supermarket in town yesterday and lo and behold they have an enormous ‘health food’ section and I found all the goodies I have been craving. I stocked up on Goji berries, Chia Seeds, Quinoa, Buckwheat flour, Spelt Flour, I was running about the aisle like a kid on Christmas day flinging stuff into my shopping basket. This may seem a tad of an over reaction, but I have never seen Goji berries or Chia seeds anywhere in our town and buckwheat had disappeared from the shelves about […]
