Coffee & Brazil Nut Chocolate Chip Cookies

When I made the cookie batter for this recipe and tasted it, it reminded me of the truffles my mum would make when I was younger, she would make coffee and walnut though and they would be huge truffles that she would keep on a plate in the fridge, unguarded, silly mistake! They lasted all but 30 seconds once we knew they were in there! So it came to me to make some truffles as well using a similar recipe to the cookie dough (recipe to come later once I’ve taken some pics!) but let’s talk about the cookies. These […]

Spicy Veggie Quarter Pounder with Pico de Gallo, Jalapeno Tahini Sauce and Herb Potato Wedges

I’m not sure which part of this dish I liked the best, the burgers were big, tasty and spicy, the wedges crispy on the outside and fluffy on the inside and the sauce, oh the sauce was just to die for. I’m not even sure what made me mix jalapenos through the tahini but it just felt like something I had to do, so I did and I’m glad I tried it as it’s fabulous. The reason I know it’s good is Martin didn’t even touch the bottle of Encona or Nando’s sauce that was on the table and those […]

Avocado stuffed Lentil Balls with Homemade Hot Sauce and Sweet Potato Wedges

I saw a post the other day for Avocado stuffed meatballs on pinterest and it got me thinking! It sounded tasty, (not the meatball bit) and I’d never thought about stuffing my burgers or veggie balls with anything and as I did have 2 (now very ripe) avocados that needed to be used up, I decided to experiment with my own version of stuffed non-meatballs! Oh my goodness, these turned out to be incredible, everything just fitted into place and tasted great. The consistency was perfect, it was even better than what I’d imagined it to be like in my […]

Papaya & Matcha Cake with Green Tea Frosting

I’d completely forgotten about the pack of Matcha Green Tea Powder I got a while back, it’s been hiding at the back of my cupboard and I rescued it the other day and put it to good use.  I’ve only used it once before in a cookie recipe and thought I’d give it another go but this time in a cake. I quite like the idea of the green frosting which I think will be quite fun in the run up to Halloween, maybe some spooky cupcakes will be made in this house, we shall see! Martin said that this […]

Spicy Veggie Sausages with Spring Onion Mash and Tangy Tomato and Onion Salsa

I’ve had to take matters into my own hands! I can not for love nor money buy Linda McCartney sausages, the UK freezer shops used to stock them but they’ve liquidated and now we’re left with no sausages! There is a light at the end of the tunnel though as it would seem someone else is looking to stock them but not until December, where I may have to buy a huge freezer, camp outside the shop and buy every pack they have! Greedy I know, but I do like those sausages. So, to taking matter into my own hands, I […]

Vegetable Thai Red Spinach Curry with Basmati Rice

Thai food is one of my all time favourite cuisine, the fresh flavours and spices just set my tastebuds on fire and makes cooking an absolute delight. It’s such a shame I didn’t have the same appreciation of the food when I was actually holidaying with the girls in Thailand many years ago. We spent a lot of our time in an Irish Bar in Patong eating “English” food and dining at the “Chinese” restaurant that was in the hotel. Sacrilege! I’ve already told Martin that we need to go to Thailand so that I can immerse myself in delicious […]
