Szechuan Vegetable Curry with Special Brown Rice

The next few days is all about quick and easy dinners, as I am out and about most nights this week, so really need dishes that I can whip up in about half an hour, this Szechuan dish is ideal for a quick delicious meal, it’s packed with flavour, you can be versatile with your choice of veggies and if you want to swap rice for noodles, then you go for it! This was a spicy dish, so if you want to make it a little less hot, hot, hot, then leave out the fresh red chillis and maybe just […]

Stuffed Portobello Mushrooms with Roast Potatoes and Onion & Mustard Gravy

We decided yesterday to do a kind of “Sunday Dinner” as we’d bought a stuffing mixture a while back and thought we’d better get around to using it before it’s too late, and what better veg to stuff than a nice juicy Portobello mushroom! We had the trimmings of roast potatoes, carrots, red cabbage and some onion gravy. Really I should have made a nice crumble for pudding but this meal is super filling, so glad I didn’t in the end! Don’t get me wrong, in future I’ll be making my own stuffing, it’s just we’d gotten a little excited […]

Iced Pineapple Cookies topped with Crushed Walnuts and Dark Chocolate Drizzle

Told you it was a baking weekend! To be honest though, I haven’t actually been scoffing cookies and muffins all weekend, I made these early last week and just haven’t had the time to pop the recipe on, hence all the sweet stuff this weekend! I’ve still got another cookie and a muffin recipe to add from 2 weeks ago… I’ll catch up soon, don’t want to overload you with all the desserts!! So, back to these cookies… in a word, they are just scrumptious, and remember if you don’t have pineapple in, then just go for some cranberries, dates […]

Cranberry & Pistachio Chocolate Cookies

Weekend baking starts here and I’ve gone cookie mad! I bought some dried cranberries that just seem to go so well in cakes, cookies and muffins, so I might just have to stock up on them as they are handy to have in. If you don’t have cranberries, just sub them for whatever dried fruits you have in, raisins, dates, apricots etc and the same with the pistachios, sub them for walnuts, hazelnuts, almonds. Just use what you’ve got in the cupboard really. I also managed to find some cacao powder (not cocoa, but cacao) wasn’t as expensive as I […]

Lentil & Carrot Pasta Bake served with Green Peas

This was going to be a lasagne until I realised I’d forgotten to buy the pasta strips, so I had to improvise and use the spaghetti (bucatini) than I had in so pasta bake is the result. But remember, if you want to, you can just sub the bucatini pasta for lasagne sheets and you’re back on track! Not sure if it’s a childhood thing but Martin can’t have lasagne (or now pasta bake) without a side of peas and usually a slice of garlic bread, luckily they both go well with the dish so no complaints here from me! […]

Spicy Mushroom & Kidney Bean Chilli served with Wholewheat Noodles

Go with me on this, I know it may not sound like something you would normally put together, chilli & noodles, but I’m up for trying out new things and this combination worked a treat. So I say give it a go, it makes a nice change from rice or tortilla chips (both of which we’ve had this week, hence my need for a change). For gluten free peeps, just sub the wholewheat noodles for rice noodles or soba. The dish was nice and spicy but not too hot, if you want a super fiery chilli, then add a couple […]
