Quick and Easy Spicy Vegetable & Black Olive Bolognese

Woo hoo, back in my kitchen and cooking up a storm…. well in the form of a quick, easy and might I add delicious pasta dish following our victorious afternoon of football and us winning a match! Howay the mighty Toon (Newcastle United for the uninitiated!) I’ve already started my baking again and made a batch of cinnamon and orange cookies yesterday, I’ll pop the recipe on tomorrow once I’ve decided on which photo I want to use! I’ve got some ideas brewing away in my head and I’ve got loads of golden plums, mango and banana in the fridge […]

Our little trip away to Bath, UK

While in the UK this summer we booked a week away in Bath so we could go have a look around the beautiful English countryside and take in some of the local sights, mainly Bath City, Stonehenge, Old Sarum and a little hike up Solsbury Hill just across from where we were staying in Batheaston. Bath is such a gorgeous place to visit, very picturesque and to be honest, I went a bit mad with the camera.  I’ve been choosing from over 300 photos for this one post, so I think these are the best of the best! Thankfully, we […]

Baked Sweet Potato filled to the brim with 5 Bean Chili and topped with Guacamole

It feels like an age since I last posted, but we’re coming to the end of our travels for the summer and then I’ll be back to my kitchen and to be honest, I think I might go a bit crazy with all the recipes I’ve been thinking about while I’ve been on holiday, there is so much I want to try, so I might just lock myself away and cook, cook, cook! This is a dish I made while we were visiting Bath, I used a can of mixed 5 beans, purely because it was our last night in […]

Cinnamon Spiced Rhubarb Tartlets served with Custard, Rhubarb Jus and shavings of Dark Chocolate

We’re in Bath this week and staying in a lovely little apartment that has an AWESOME kitchen. But, we’ve actually been so busy doing the tourist thing which has meant that I’ve not had a lot of time to spend cooking, but I was determined to do something while I’m here, so after a fabulous day out to Stonehenge and Salisbury, we got home and I went to work on using some of the beautiful rhubarb I bought at the supermarket. Ideally I would have loved to have stopped at the little stall just outside Stonehenge that was selling fresh […]

Quick and Easy Carob Coconut & Oat Cookies

This was me making the most of my carob stock, which is ideal if, like me, you want a bit of a change to maple syrup, plus it’s cheaper! I actually buy my carob syrup when I’m in cyprus, so it’s easy for me, but remember if you can’t get your paws on carob syrup then just use maple syrup instead. Martin isn’t a massive fan of coconut so I made these cookies while I was on my lonesome for a week, a cheeky little cookie for the afternoon and I do LOVE coconut, thinking about it now, I should […]

Balsamic Sauteed Aubergine & Red Pepper served on Crisped Bread smothered with Hummus with a White Bean & Herb Ragout

This is a dish I made whilst I was on my own for the evening and I’m all about quick and easy so I can get back to watching series 1 of Absolutely Fabulous, strangely, I have only ever seen a few episodes here and there when they have been on TV and I just took this notion to watch the first series, it’s hilarious, I can still remember the fashions that Eddy and Patsy try to pull off and I just love Joanna Lumley’s character! So, quick scan of the fridge and cupboard and lo and behold we have […]
