Chocolate Orange Oat Cookies with a Scattering of Sesame Seeds

This is yet another recipe from last week (I’ve been storing them up for you, so I can post recipes while I’m travelling). These cookies are lovely and quite crumbly too which I like in a biscuit. The oranges were enormous and so juicy and we all know that chocolate orange is a winning combination every time! I went on the hunt yesterday for some buckwheat flour but couldn’t find it in any of the shops I visited, I think I might need to go to a specialist health shop, but I did have a good look round and there’s […]

Tagliatelle tossed with Roasted Butternut Squash, Cherry Tomato and Sautéed Garlic & Onion Spinach

This recipe was from last week and I just didn’t get the time to post it up, so here it is! Better late than never! The butternut squash just looked fabulous so I just had to have it! The garlic and onion spinach was another after thought for me as I want to keep my dishes nice and colourful and I thought this would go lovely with the dish (it does by the way). I had my first taste of Spirulina today, we bought some from Holland and Barretts while we were shopping yesterday and I know it’s packed with […]

Mushroom Spaghetti Marinara with Veggie Meatballs

Here is part 2 of the Potato and Bean Burger recipes. So we’ve had them as plain old burgers and now we’ve got some left over and want to mix it up a bit, so we split the burgers into 3, roll into a ball and now they have become, as if by magic, veggie meatballs!!! Ta-Dah. I can’t say which I liked best as they were both lush, but this is a great recipe to have in mind as it’s cheap and you can make a big batch that will cater for a few different dishes throughout the week. Herbed Potato Bean Burgers

Now here’s a recipe that gives you some great options… I made these burgers on Monday night and had them with cumin spiced potato wedges and I had 4 left over which I put in the fridge and the next day I made a veggieball spaghetti by breaking the left over burgers into 3 and rolling into balls (I’ll do separate recipe for the pasta) it worked an absolute treat, I don’t think I’ve done a veggieball pasta before so I was delighted with how it turned out. The consistency was just right too and so tasty. Just went shopping […]

Sweet Nectarine Tartlets with Poppy Seed Sprinkles

Who’d have thought I’d be in such turmoil about a tart base… I thought about a pastry base and I thought about a raw base… should the whole tart be raw or could I do a half and half? In the end I threw caution to the wind and created a raw base with a not so raw nectarine filling and this tart is beautifully sweet and delicious and moreish and all the other beautiful adjectives you can think of to describe yummy! The base is great all on it’s own, if you’ve any left over just roll it into […]
