I wanted something fabulously quick and easy after a long day of travelling, so when I saw that fresh figs were on special at the fruit market I couldn’t resist. It was Martin’s birthday last week and I decided, on the day, to make a cake for us to have that afternoon and I was ecstatic with how it turned out. Yet another recipe I have been keeping in reserve for when I’m travelling and this dish is just delicious, I did however forget my splash of contrasting colour on the plate, but I think it still looks pretty tasty. Here is the recipe for muffins where I have used rice flour, I was very intrigued with what the consistency would turn out like and I have to say I am pleased with them, I liked the denser texture and they were more “muffin” like than my cupcakes which is what I wanted. Can you tell I’m using someone else’s kitchen… it’s all cakes and puddings just now! I’ve wanted to make blueberry muffins for such a long time and finally I’ve gone and done it! I shall hold my hands up now and say my first batch was a complete disaster, too much liquid and I overloaded them with blueberries which then released even more juice so the muffins were super squishy (still tasty, especially with a big dollop of vanilla alpro yoghurt on top!) but nothing even resembling muffins.
