Fresh Fig, Walnut & Mushroom Salad with a Carob & Balsamic Dressing

I wanted something fabulously quick and easy after a long day of travelling, so when I saw that fresh figs were on special at the fruit market I couldn’t resist. Team it up with some lightly sauteed mushrooms, bang on a beautiful dressing and some walnuts and you’ve got a pretty tasty salad ready in less than 15 minutes. I’ve been toying with the idea of a sweeter dressing (not using maple for a change) and carob is lovely, so much so I think I might make some cookies tomorrow using the carob syrup…. hmmmm but what to put with […]

Chocolate Cake with Coffee and Maple Frosting, outrageously simple birthday cake idea

It was Martin’s birthday last week and I decided, on the day, to make a cake for us to have that afternoon and I was ecstatic with how it turned out. I haven’t made many new dishes since I have been back visiting family, so this was a treat for me too, I love to bake. Glad I tried the oven out before with the muffins as it does differ a little from my oven at home, so I had to keep an eye on it so it didn’t overcook and it turned out almost like a brownie consistency, luscious! […]

Grilled Marinated Aubergine Steaks topped with Black Olive and Lentil Tapenade served with Rosemary Herbed Polenta Squares.

Yet another recipe I have been keeping in reserve for when I’m travelling and this dish is just delicious, I did however forget my splash of contrasting colour on the plate, but I think it still looks pretty tasty. ┬áThe polenta bites were inspired by the dish we had in Bologna, grilling the squares really crisped them up (without any need for oil which I thought was great), we had a few left over, as always, and had them with lunch the next day, I love bonus dishes like that! (I’ve modified the recipe for the polenta so yields half […]

Avocado and Mixed Bean Salad topped with Tahini

This cheeky little recipe was Martin’s lunch inspiration the other week, I took a photo as it looked so gorgeous and was delicious, so quick and easy for lunch and you could pack it in some Tupperware and take it to work with you too. Now that the weather is getting hot, hot, hot it’s nice to have something on hand in the fridge that you can just pop in a bowl and eat then and there, no cooking required! We’re off out this afternoon for a walk to Penshaw monument, I’ll be taking my camera to get a few […]

Chocolate Chip Cinnamon Muffins

Here is the recipe for muffins where I have used rice flour, I was very intrigued with what the consistency would turn out like and I have to say I am pleased with them, I liked the denser texture and they were more “muffin” like than my cupcakes which is what I wanted. I am going to have another go with them tomorrow and try some orange and cranberry!!! Had a fabulous day out today, we took a us ride into Newcastle and had a wander around the city centre before grabbing some lunch to eat by the quayside, the […]

Cinnamon Spiced Blueberry Muffins

Can you tell I’m using someone else’s kitchen… it’s all cakes and puddings just now! I’ve wanted to make blueberry muffins for such a long time and finally I’ve gone and done it! I shall hold my hands up now and say my first batch was a complete disaster, too much liquid and I overloaded them with blueberries which then released even more juice so the muffins were super squishy (still tasty, especially with a big dollop of vanilla alpro yoghurt on top!) but nothing even resembling muffins. So I rejigged the recipe and they came out fabulously, consistency was […]
