I was just messing about in the kitchen yesterday and looking to jazz up my dark choc chip cupcakes, which I LOVE by the way, but wanted to see if I could alter them slightly, so I thought I’d make them slightly more dense, less cupcake, more brownie I suppose. You can’t beat an easy “go to” pasta dish when you need something quick for dinner, just go through your cupboards and fridge and see that you’ve got and try and incorporate it into your pasta recipe, so for me this included some fava bean and lentils and it was just lovely, especially with some left over sliced black olives on top… was yummy! You could use lots of other cupboard staples like chickpeas (garbanzo beans) black eye peas, kidney beans, butter beans etc just use what you have in (not baked beans though!!!). ooooooh!!!! Very excited to share this… I’ve tried to make a biryani before but it just didn’t quite turn out right, that is until last night. I took a little leaf out of my risotto recipe and made some modifications to cooking the rice and it worked an absolute treat, I am so pleased! I also managed a pretty decent Bhindi Bhaji (Okra/Lady’s Fingers curry), the only thing I would do next time is to cook it a bit longer so that the okra can really take on the flavours, but apart from that it was delicious. All the beautiful fruits are coming out and I am having a field day adding them to my recipes. I got some fresh figs, which I love to eat au naturale, but I thought about popping them into some kind of dessert or snack, so I made these fig & oat squares. Lemon Herbed Risotto with French Beans and Red Kidney Beans topped with Grilled Okra and Garlic Sauteed Portobello Mushrooms.
I can’t say it any plainer, this dish is lush! The risotto is baked in the oven and it’s bursting with earthy delicious flavours that will send you back for seconds and thirds! I was going to do the dish with grilled asparagus, but the fruit market was out, so made a last minute change to okra (which I think are called Lady’s finger in the US), so glad I did, okra takes on flavours really well and is so easy to cook.
