Baked Chickpea & Chili Koftas in a Hot Jalfrezi Curry Sauce

This is my first go at making kofta, I have never had them before so, honestly, I’ve no idea what they are supposed to taste like, all I know is these are little bundles of deliciousness and teamed with the spicy Jalfezi they are divine. They are almost like falafel but without the softness of the potato through them, I’ll most definitely be making these again and just mixing up the different curries as it’s a good alternative to rice or breads, really filling. I’m still waiting on my Yoga Bible to arrive, I bet it gets here the day […]

Delicious Chocolate Coffee & Walnut Cake

It’s been a while since I made something with coffee and walnut, another of my favourite dessert combinations, and instead of cookies I decided to make a nice light cake for afternoon tea, well it is summer after all! This cake was similar in texture to the caramelised banana cake, it was light and had that real decadent feel to it that makes you think you’re eating something quite calorie dense, when in fact you’re not, it’s a great little treat for dessert or like me, with a cup of green tea in the afternoon whilst Wimbledon is on! I […]

Vine Tomato, Chili & Herb Risotto served with a Creamy Pea Puree and topped with Caramelized Red Onions

I know, another wordy one, but I like flinging in super descriptive titles in an attempt to lure you all in for a looksie. As we’re going to be travelling again soon, I’m using up all my cupboard stock and I had a 3/4 full bag of Arborio rice that need using up, and I do love a good risotto, it’s just getting a few bits and bobs from the fruit market to really fill it out and make it super tasty. You might ask why I added in the pea puree and red onions, and I would tell you […]

Lentil, Sweet Potato & Mixed Bean Burgers with a hint of Wholegrain Mustard

Burgers, burgers, burgers! It’s BBQ season here and there is nothing better than rocking up to your friends and family BBQ’s with your own ready made burgers to enjoy! Careful though, you might find them disappearing to some curious and hungry dinner guests. We thought that eating a plant based diet would be difficult and possibly isolate us from socialising in the summer, it’s very hard to turn up to a family gathering only to find there is NOTHING you can eat, the times I’ve heard, “you eat tuna right?” or to find that all the vegetables have been generously […]

Amaretto Caramelised Banana Cake with an Almond Chocolate Drizzle

Oooooh bananas! ┬áSince realising that I can now eat them, life has been transformed! I’ve had banana cakes, I’ve made ice creams that are tremendously tasty, although I have in fact stopped short of actually just eating a plain banana, I’ll need to give it a go and see how I get on. For those who haven’t seen my earlier banana related posts, I have previously never been able to eat a banana without a horrible reaction, chest pains, nausea, migraine, not very pleasant, and it’s only recently with some research that I’ve come across others who do not get […]

Madras Chickpea & Vegetable Curry served with Mushroom Biryani

It’s not really the weekend in this house until we’ve had a curry and I’m so taken with the mushroom biryani I made last week, that I thought I’d do it again but team it with a beautiful spicy madras curry with lots of fresh vegetables and chickpeas. I opted for cauliflower because it just soaks up so much flavour and the chickpeas are always tasty and are an easy way bulk up your curry too. Is it bad that I really miss being in Italy, for some strange reason I always feel really at home there, so much so […]
