Deliciously Moist Cherry Muffins with a hint of Almond

Here is the other Cherry recipe I mentioned a few days ago, I’ve only just remembered to post it as we’ve just finished the last 2 muffins today whilst watching an episode of Hornblower… ooh Horatio! The muffins were still beautifully moist, even after 4 days, I just kept them in an air tight container in the fridge. I meant to buy some more cherries when I was at the market yesterday but forgot, although I did spy some fabulously ripe figs that I might get tomorrow for some figgy delights! Started the Stephen King book Lisey’s Story, but to be honest […]

Stir Fry Vegetables with Szechuan Sauce served with Pineapple & Spring Onion Rice, Pickled Red Cabbage and Toasted Cashew Nuts

I just love it when a plan comes together! I’ve been thinking about making some other stir fry sauces that differs from sweet and sour and the vegetable Szechuan is on my list of “things to order” if I’m eating out, so I thought I’d give it a bash and make my own version. No Bake Cherry Energy Bars

This is the first of my cherry recipes, I thought that the fresh cherries would be fabulous in a nutty energy bar with a dash of vanilla and I was absolutely right, I just keep these in the freezer and take a bar out when I want one. I got 8 bars from this recipe but they are a decent size, so you could get 12 I think for nice quick snacks. If you don’t have cherries you could always add some apricots or cranberries etc Just started a new book yesterday, I’ve gone back to Stephen King and looking […]

Spicy Mushroom Tikka served with Brown Rice, Shredded Red Cabbage & Carrot

I don’t know what came over me today but I had this notion for a Tikka dish, I wasn’t sure how I was going to create the right consistency and then I thought about the pot of tahini we have in the fridge and I thought it was worth a try… people… it’s delish, it really delivers that creamy sauce texture and holds well to the mushrooms. Martin even had seconds (I did slightly over cater just a teeny bit). This dish is really easy to make and you could just make a big pot of it and keep some […]
