Spicy Veggie Burgers with Maple Pineapple Slices, Sweet Potato Wedges and Red Onion Chili Chutney

Friday night as usual was burger night and I’m experimenting with the different beans I can use in my ingredients. I quite like the taste of black eye peas and thought they would be ideal to use along with some other vegetables. I’m starting to feel a lot more confident in throwing things together and trying new combinations, if you’d told me last year that I’d be in the kitchen making my own recipes from scratch I would have thought you raving mad, but once you get used to foods and not worry too much if it doesn’t turn out […]

Truffle Centred Almond Cup Cakes with Peanut Butter Frosting

I wanted to do something a little different with my cup cakes this time, so I thought about adding in a new texture and the dates were just staring at me from the cupboard shelf and reminded me of those lovely raw truffles I made a couple of months back and I thought… why not? I only added the frosting on at the last minute as my cupcakes are quite small and the truffle was sticking out a little bit at the top so I wanted to smooth the look out. These will work just as well without the frosting, […]

Roasted Beetroot & Pearl Barley Risotto with a Coriander Cream Drizzle and Asparagus Spears

Who would have thought that swapping the arborio rice for pearl barley would create such a fantastic risotto dish. (Now for those on Gluten Free, I’d stick with the Arborio Rice as I don’t think Pearl Barley is suitable, but the dish will work just as well with risotto rice so don’t worry). I loved this dish, the colour is deep and gorgeous and I nearly are all the coriander cream before I could put it on the plate, it’s scrumptious. The asparagus made it onto the recipe thankfully, I’m embarrassed to say that I think that might have been […]

White Bean & Spinach Cannelloni with a Picante Mushroom Sauce

I had a thought about making cannelloni and realised it’s been well over a year since I made it last, I think I felt a little stumped as to what to fill it with, but now… well now we have a delicious white bean and spinach filling that is just divine and along with the picante sauce it’s just a great pasta dish that everyone will love, vegan or not. I’m going to keep the filling as a possible pie filling with a nice gravy, I think it’ll be quite versatile and beĀ usableĀ in a variety of dishes. I managed to […]

Maple Glazed Courgettes Topped with a Spiced Walnut & Oat Granola Crust, served with Apple Cider Braised Red Cabbage and Mustard Mash

I started off with one thing in mind for this dish, but halfway through decided to mix it up a bit and add the savoury granola… it just felt like the right thing to do. I was just going to do plain grilled courgette (zucchini) and just brush it with a little maple syrup and a sprinkle of paprika, but I wanted to add a different texture to the dish to lift it a bit. Soooo flying by the seat of my pants I quickly put together the walnut & oat granola for a bit of crunch, added the paprika […]

Espresso & Walnut Cake Squares, another addition for Afternoon Tea

I made these last week, but completely forgot to put the recipe up, I made them the same day as the Mint Chocolate bars and probably didn’t want to look like a pudding fiend! I’m still using banana in my baking these days, I think it’ll take a little while for the novelty to wear off on me, it has been a LOOOOOONG time since I ate bananas remember. With this recipe, you can use espresso or your usual favourite coffee, or even some of the lovely flavoured coffees you can get these days in the supermarkets (or so I’ve […]
