Quick & Healthy Cherry Tomato & Caper Spaghetti

Wednesday has gone straight back to being pasta day and I threw this little medley together from my fridge contents, completely forgot that I’d ran out of sun-dried tomatoes, so ended up using capers which was delicious, the sweetness of the cherry tomatoes along with the tang of the capers and balsamic was fabulous. On a completely separate note, I’ve been reading Bossy Pants by Tina Fey and it’s hilarious. I think it might be even funnier because when I’m reading it, it’s Tina’s voice I hear which makes it all the more amusing. I’m half way through it since […]

Quick & Healthy Hazelnut & Pumpkin Seed Cookies

I’ve been feeling the need to vary my cookies a bit and move away from using margarine and oils in my baking, but was a little unsure as to what I could use to make sure that I maintained a cookie like consistency and not end up a kitchen disaster.  So I’ve been experimenting today and baked some of these pretty healthy and wholesome cookies that taste seriously good. They still have a consistency that’s not quite biscuit, not quite cake, but I like it. I love anything with oats (perhaps it’s the Scottish in me) I was always certain […]

Coconut & Vanilla Cake with Hazelnut topped frosting

Oh it’s good to be back. It seems like a decade ago that I last baked anything and I thought I would use some of the ingredients I had in my stock before I go do a “big shop” on Monday, so the coconut and vanilla cake was created from the pantry stash! I’m trying to move away from using oil in my cooking and the cake itself is pretty healthy,I just went a bit mad as it’s the weekend and added the frosting – but you can do the cake without, maybe just add a little orange drizzle or a […]

Sour Cherry, Chocolate & Walnut Muffins, decadence for the weekend.

While we’ve been here I’ve seen punnets of cherries in the supermarkets that are just luscious and it got me thinking about possible muffin scenarios which would match my love of fruit with chocolate…. so this morning I got into my borrowed kitchen and went to work on these delicious muffins. The recipe will make 6 generous muffins, but having already scoffed one down, I think it might be better to make 10 – 12 from the batter mixture as they are quite devilishly rich, but it’s up to you. Plus… I’m using my new camera – woo hoo, it […]

Courgette and Red Pepper Fusilli Pasta, simple healthy dish ready in under half an hour

I’m still on my pasta dishes at the minute, purely because you can make them really quickly and even better, pretty cheaply too. I did mean to make some Valentine desserts yesterday but we decided to stay an extra day in York, so I didn’t get back in time, but today I’ve been out and got all my ingredients for something really tasty which I’ll be making tomorrow, so will let you know how I get on with that! (I’m quite excited, hope it turns out as well as it looks in my head!) We just couldn’t bear to leave […]

Mixed Vegetable Castellane, packed with delicious winter vegetables.

I can’t believe that I forgot to add this recipe back when I made it last year. Perhaps because it’s FREEZING here I’m indulging myself in some of the more warming looking foods. Today I have 3 layers on, 2 pairs of socks and I’m still cold, I’m such a temperature wimp… but it is super cold (for me!). This was another dish I made while on holiday in Rome, I couldn’t resist trying some of the pasta that is hard to find in my neck of the woods and this was the first time I’d seen Castellane pasta, so […]
