Roasted Peppers stuffed with Fruit & Nut Rice served with Peppered Cauliflower Mash & Caramelized Brussel Sprouts

If my mum reads this, she’ll probably faint with shock… I ate a serving of brussel sprouts last night (or the devil’s cabbages as I call them). Martin has seen all these different dishes with brussel sprouts in them and yes they do look lovely, but come on people…. it’s sprouts! But I’m an adult, I should be able to prepare a dish which I can actually eat without feeling nauseous and Martin loves sprouts so I feel I should give it a go. When I was a kid, my mum would serve us sprouts with a big plate of […]

Moroccan Spiced Vegetable Medley served with Sultana & Almond Bulgur and a Black Olive Tapenade

Today I am green with envy, a lass I know who has just opened up her fitness studio in Edinburgh is heading off to Miami at the weekend to become certified as a JNL Fusion Instructor. It sounds fabulous. I wish I had the confidence to get up there in front of people and instruct, but I’ve had my little dabble in getting up on that stage and I can’t look up, I seriously just spend the whole time looking at my feet, not the best if you have dreams of becoming an instructor. I’m not even sure how I […]

Pasta Bellissimo, a very simple, tasty main course that’s ready in under half an hour

I watched Inception again yesterday, I’d already seen it when it first came out and loved it, but didn’t realise I’d forgotten pretty much everything that happened in the movie, so it was nice to watch it all over again. I’ve been watching a few films with Joseph Gordon-Levitt starring, he’s pretty good, I saw him in The Dark Knight Rises and also 500 days of summer. I may have a look and see what else he’s in and have a Gordon-Levitt movie fest. Today the sun was shining again (woohoo) so we had scenic route walk to the fruit […]

Cinnamon Spiced Pecan Pie – From my weekend baking session.

I have to say that I think this is my first time trying pecans. I don’t recall ever having them before, but they taste scrummy. I mentioned in my last post that Martin returned home with a big bag of pecans straight from the tree of our friend’s garden, which prompted the instruction for Pecan Pie, so yesterday before going to watch the mighty Toon take on Norwich (Football for the uninitiated and it was a draw 0 – 0) I locked myself in the kitchen, popped on my favourite playlist and set to work. First word to describe the […]

Being Vegan. Cruelty Free in a Cruel World.

So, we’re 8 months into our vegan lifestyle, and starting to come a lot more to terms with exactly what it involves, the pros and cons and such like. Seems as good a time as any to have a bit of a progress report. First, the positives. Number 1, I feel great. I didn’t think I was particularly overweight to start with but I’m 2 stone lighter than this time last year and down to a weight I hadn’t previously seen since I was 22 and returning from a year of backpacking in Australia. I think I had previously assumed […]

Nicely Spiced Chocolate Chip Cookies (Dairy & Egg Free)

It’s the weekend and we know what that means… it’s cookie & cake time, so I’ll kick off today with some chocolate chip cookies that are very quick and easy to prepare and just a nice size to accompany a cup of tea or coffee (remember coffee with hazelnut milk combo!) I’ve done a big workout this morning so don’t feel guilty about having a cookie or two.  I still ache from Wednesday, not sure what it’s from but have a feeling it was some of the new Yoga moves we did, it just feels a little tight behind my […]
