Thai Cauliflower & Red Pepper Curry with Fragrant Basmati Rice

When I say Thai Food, what do you think? Fresh, flavoursome, lemongrass, curry… I love Thai inspired food, my first girls’ holiday was to Phuket back in 2000, we stayed in Karon Bay and had 3 glorious weeks of seeing the sites and eating and drinking a lot. We ate fresh pineapple on the beach in Kata Bay, sesame cashew nuts straight from the factory line in Phuket and we had more than a few Mai Thai cocktails whilst playing Jenga in the local bars of Patong. In fact, it was on our first night out in Thailand that I […]

Baked Onion Bhajis, a tasty and healthy starter for your curry night.

I mentioned before that I was going to make some onion bhajis and I’ve gone and done it. Usually the type I’ve had before have all been deep fried, but not in the this house.  I baked them in the oven and they were super tasty. I was really pleased with the result and was glad to have found some Gram Flour in my supermarket. I think I’ll be making some more Indian cuisine very soon as it’s ideal for my weekend curry night. Yesterday I ended up watching Skyfall, told you I was in the mood for an action […]

Carrot & Orange Cake with a Chilli Chocolate Drizzle, ready in half an hour.

It’s the weekend baking fest again and I had a load of carrots left in the fridge and a few oranges which makes for a great cake combination, but I still want to keep it quite healthy and not go overboard on the sweet stuff, so as you can see, no sugar is added. I used the sweetness from the dates and the vanilla to keep this a healthy-ish weekend treat, the chilli chocolate drizzle was an afterthought on my part, I saw the choccie, I saw the chilli, I thought why not! It works so well too, the taste […]

Samosa Pie served with red onion & tomato salad and a minty cucumber side

Martin found this recipe for a samosa pie which sounds just fabulous, we love samosas and we love pie, so a big thank you to vegetariantimes for coming up with the idea, it’s one of the few recipes where I really didn’t have to adapt or modify the recipe. The only thing I did differently was the pastry topping, but everyone had their own pie crust preferences. This took a bit longer than I thought it would, purely because I was fiddling about with bits and bobs, but the end result is delicious, I was chuffed and it’s led me […]

Spicy Chickpea Burgers with Satay Chutney, ready to serve in less than 40 minutes

Well, my lunch yesterday went very well, the restaurant we went to, which was empty, was very accommodating when I asked what vegan options they had (there were none on the menu), but the lovely lass got the chef to prepare me some delicious vegetable kebabs, courgette, mushroom, onion, carrot, peppers, they added a little coriander and garlic rub to it and it was lush! I’ve noted that many of the restaurants I used to frequent in Edinburgh will happily prepare vegan fare if I give them a day or 2 notice that I’m coming, I’ve been emailing quite a […]

A Simple Mushroom & Kalamata Olive Spaghetti Napolitana

Wednesday night is always pasta night in this house (gym class doesn’t finish until 7, so need something quick to put together when I get back, hence the pasta dishes!) and after the tapenade I made the other day I was keen to make it again and incorporate it into my pasta dinner and thought that using it as a topping from some toasted pitta would be just the thing – and it was, it was scrumptious. I’ve also been using more passatta as opposed to the tinned chopped tomatoes as I think it gives my sauce a much richer […]
