Sweet & Spicy Vegetable Stir Fry, a quick and easy recipe for this weekend.

What with Christmas shopping, attending Christmas Carol services, writing out Christmas cards and preparations for the big day next week, it’s sometimes really nice to have a quick dinner option that doesn’t take all night and you can get back to the Christmas movie marathon that is simply mandatory at this time of year. This year we’ve even gone all “Frasier Crane” and bought ourselves a bottle of sherry, Tio Pepe Fino in fact. So I found some suitable glasses today (not proper sherry glasses unfortunately) so we might give that a try tonight, fingers crossed it’s nice. I’ll be packing […]

Raw Vegan Chocolate Covered Caramel Nougat Bars

As it’s Christmas time, all the stores have got in their tins of sweets and selection boxes and it got me into candy making mode, so the other day I set to making some vegan sweets that are a little too decadent for everyday consumption but for a treat this Christmas are just perfect. I still need to do quite a bit of Christmas shopping but the weather here has been atrocious and the main road into town has flooded, so we’ve been restricted to our little village, but the rain has stopped this morning, perhaps giving the road a […]

Vegan Chana Masala served with Fragrant Basmati Rice

It’s crazy how you become so used to eating spicy food, that when you are limited with your spice rack to accommodate others palettes, it’s like you go mad for heat when you get the chance. Since my in-laws have gone home I have flung in chilies, hot sauce, jalapenos etc to pretty much every main dish I can make, the hotter the better in this house! Last night I made a Chana Masala (we love chickpeas!) and it was tasty and spicy and just delicious. I over catered as usual, so Martin had a huge plate full, no complaints from […]

Vegan Christmas Mincemeat Slice. Give Santa a real treat this Christmas Eve!

When you were young what did your parents leave out for Santa on Christmas Eve? In our house it was a couple of mince pies and mint matchmakers, don’t ask why, I think we might have figured Santa would like some minty magic for his sleigh ride. We always thought the big guy was a sloppy eater with the amount of crumbs that were left behind though… I’ve made a couple of batches of mince pies already this month, first there was my test batch and then a second lot when the in laws were over, so when it came […]

Vegan Orange & Poppy Seed Cake with Velvety Chocolate Frosting

I am in full blown festive mode now.  We watched It’s a wonderful life last night and I’m feeling all Christmassy, opposed to the night before when we decided to watch Planes, trains and Automobiles… nobody parent checked that film! It was all going so well, sat with the in-laws having a cup of coffee enjoying the film and wham, in a 40 second period Steve Martin Curses 16 times… I was mortified! But hey ho! I’m back in winter wonderland and today, being as it’s my in-laws last night, I thought I’d bake a cake and, seeing as I’m […]

Vegan Mint Choc Chip Ice Cream, a really simple recipe.

What an absolute triumph I’ve had today. I put together a cheeky little dinner for my in laws, something that they’ll remember for when they get back home and the rest of the family quiz them about how it went spending 10 days with 2 vegans! So my plan was to make them something that they might order at a restaurant anyways, but make it super tasty, so I went with the Mushroom Risotto, followed by home made mint choc chip ice cream (recipe to follow) served with a slice of 10 minute chocolate cake (which in this case only […]
