Vegan Moussaka, a Mediterranean delight!

I remained on my “Greek Style” menu and tried my hand at the Moussaka. As it was my first attempt I’m still in the process of perfecting the spice mix, but this worked really well, I might opt to add a little red wine to it next time. But you can taste your lentil mix and decide for yourself if it’s spiced enough and adjust to suit your own taste. Mushroom Stifado and Herb Bulgur, a great vegan Mediterranean dish.

More visitors due next week, so back into recipe preparation to make sure we wow them with a fabulous range of vegan meals. First on the menu is the Mushroom Stifado. Vegan Mushroom Risotto topped with Caramelized Onions, a tasty main meal for 2, or a starter for 4 people.

I’ve had a pack of Arborio rice for a while now and thought it was time to make good use of it. I’m not usually a risotto fan, but this dish is so tasty and packed full of flavour (and is now on my recipe list for when the in-laws visit next). This recipe will serve 2 nicely as a main meal but if you’re really hungry, add another 1/2 cup of rice and a few more mushrooms to flesh it out more. Vegan Chocolate Cake with a creamy date topping, takes 10 minutes top to make!

There’s been a couple of times I’ve ran out of my home made biscuits and I’ve really wanted something lavish for dessert, so I was pottering about in the kitchen the other night and decided to experiment with a basic microwave chocolate cake recipe but jazz it up a bit with a sauce/topping to make it extra decadent!
